Learning outcomes: Knowledge: Student can define and describe the bioactive components in foods and identify their beneficial properties on human body. It makes their role in prevention diet-related disease and identifies the need to introduce bioactive substances to foods in the proper human nutrition. Student name and classify these substances because of their properties. The student is able to characterize and describe, distinguish between the substances in such fortified foods. It describes and explains examples of bioactive substance beneficial properties to the proper functioning of the body. It lists and has fiber, oligosaccharides, polyols because of their favorable properties of the human body and intestinal flora. Student name, and explains the traditional and new technological modifications used in food production of bioactive substances. Describes the sensory characteristics of these products due to the specific composition and meeting the specific needs of the organism (athletes, the elderly, infants, pregnant and lactating women and young people) Competition: Student correctly interprets the concept of bioactive ingredient in food. Outlines and interprets the selection of bioactive components in the aspect of the specific nutritional needs. It combines and evaluates individual bioactive components of a favorable impact on the body and changes in disease prevention. Properly formulated bioactive properties of components and uses the criteria for their classification. The student evaluates the suitability of the importance of bioactive components. Able to interpret the health benefits of their use in nutrition. The student is able to analyze the beneficial effects of bioactive substances on human health. He can criticize the legal conditions this sort of food ingredients on the market. Student is able to design the composition of bioactive components in the prevention of the metabolic disease. Evaluate its beneficial effect on body functions to verify its usefulness in the prevention of metabolic disorders. Student outlines the directions and orders impact of bioactive substances to improve mental and physical quality of life of consumers.

Competences: Students are eager to find examples of foods with bioactive substances that meet the specified needs on the body. Demonstrates proactive in assessing the properties of the foods in disease prevention of diet-related diseases . It is capable to interpret the criteria for distribution of bioactive substances because of the composition, or to satisfy the specific needs of the body. He sees between relationships between diet-related diseases prevention and food intake of bioactive components is conscious of the role of bioactive substances in pro-health lifestyle is sensitive to the nutritional needs of people of all ages, is creative in recommending the bioactive components in the prevention of disease. The student is able to design the composition of bioactive substances in the fortified foods, the role of pro-health nutrition.

Prerequisites: Human nutrition I

Course content: The process of training the student should know the bioactive substances in food, its allocation due to meet the dietary needs of specific population groups, use the existing information on the production, design and application of bioactive substances in fortified foods.
