Learning outcomes: After passing the course the student will know chemical composition of raw milk and its products as well as necessary law regulations. He will understand how technological parameters affect their quality. He will be able to evaluate quality of these products.

Competences: The student is prepared to determine chemical composition of milk and its products and evaluate their quality.

Prerequisites: General Food Technology, Biochemistry, Microbiology

Course content: European and Polish milk market, law regulations, chemical composition of milk and its products, unit operations in milk processing, quality evaluation of milk and its products, characteristics and quality evaluation of additives used in milk processing, adulteration of milk products and methods of their detection, labelling of milk products.
