After completing the course student should know: mechanisms of milk formation, significance of milk in mammals, composition and physical properties of milk, milk functions and properties with respect to health status, conditions of the composition and quality of milk and colostrum, physiological and nutritional significance of milk in human feeding, usefulness of various mammals milk in processing, milk humanization.Competences:
The knowledge of significance and function of milk and analytics in the range of milk quality assessment. Prerequisites:
Course content:
Production and significance of milk of various mammals in feeding of neonates and human, physiology of milk formation, composition, physical, chemical and biological properties of milk and colostrum, properties of milk components with respect to human health, processing of various mammals milk, directions in milk processing, milk humanization, milk in prevention and therapeutics.
