Knowledge:
a)Identifies hazards on process of gaining and processing game meat
b)Indicates the current legal provisions governing the veterinary supervision of gamemeat
c)Identifies the meat changes induced by disease that affect the quality and health evaluation of game meat.
d)Proposes and plans post-mortem laboratory tests of game meat
Practical skills:
a)Estimates and identify hazards to humans, due to an incorrect sanitary-veterinary inspection of game meat
b)Performs independentyly ante-mortem and post mortem inspection of game animals and meat
c)Describes GHP/GMP for processing of game meat.
Competences:
a)Works with hunters and provide training in the handling of carcasses of wild game animals.
b)Decides on the health evaluation of game meat
Prerequisites:
Hygiene of slaughter animals and meat, food law, microbiology and hygiene processing of meatCourse content:
Students learn the currently applicable legal provisions governing sanitary problems of gaining and processing game and its labeling nad marking. Students learn practical sanitary requirements to be met by game meat processing plants. They learn the cuts of wild game carcasses on technological and culinary items.Recommended literature:
