Learning outcomes: Students are able to isolate cultures from nature and evaluate their biotechnological potential, they know how to prepare inocula and how to carry out and describe fermentation processes, they also know how to store cultures for long periods and what methods can be used for strain improvement.

Competences: Students have insight in biological and technical background of different microbial biotechnologies and can adapt this knowledge to design a new bioprocesses.

Prerequisites: biology, biochemistry, general microbiology

Course content: Industrial microorganisms. Strain isolation, screening, identification, biotechnological improvement (mutagenesis and DNA recombination in vivo and in vitro) and long – term preservation (subculturing, drying, freeze-drying, freezing). Overview of industrial microbial syntheses (production of starter cultures, amino acids, vitamins, pigments, polysaccharides, organic acids) by description of production strains, biosynthesis process and its regulation, and product recovery, purification, formulation and application in food industry.
