Learning outcomes: Knowledge: After completing the course student is able to define, classify, estimate quality and usefulness of food concentrates. Skills: Student can design convenient, special and functional food and is able to develop products recipes and food concentrates technologies. He is able to assess the quality of convenient food.

Competences: The student demonstrates understanding of the high demand for convenient and functional food. He sees the relationship between quality and value of raw materials and the quality of concentrates and functional food.

Prerequisites: Biochemistry, General Food Technology, Vegetable and Fruit Technology

Course content: Convenient and functional food (definitions, classification). Food concentrates. Dinner and desserts concentrates. Supplements for children and pregnant and lactating women. Low energy food. Food for athletes. High dietary fiber food.
