Learning outcomes: On completion of the course, the student will know the following: the principles of quality management in aspect of integration system in accordance to norm ISO 9000 and 17025. The basics of European food legislation with traceability and international food standards BRC, IFS. Moreover, the student will know how to prepare quality management and HACCP documentation and also he/she will know principles of modern economical structures and creation of innovation systems.
Competences: The student who has finished the course will be able to be a member of teams designing and implementing food quality and safety systems in organizational units involved in food production and distribution. He/she will be able to be member of auditing team and to manage by production system or laboratory.
Prerequisites: The knowledge of quality and food safety management, basics of micro and macroeconomics, marketing and management.
Course content: Presentation of ISO 9001 norm, philosophy of TQM and Six sigma. Meaning of BRC and IFS standards and 17025 norm. Management of food safety and integration of quality and safety systems in aspect to norm ISO 2200. . Food production chain with respect to EU regulations and international standards.
