Learning outcomes: Student can use his knowledge in practice in laboratory conditions for gaining and processing of basic food components and can select and lead food preservation process.

Competences: After completing of the course student knows basic elementary processes utilized in food industry. The completed course allows students to study detailed technologies.

Prerequisites: Mathematics, Physics, Chemistry, Microbiology, Food Analysis

Course content: Food Industry – its organization and structure, the general tasks of food industry; the quality of food and raw materials used for the processing; operations and uncompelled processes used in industry, preservation and storage in industry production and their influence on biological, functional and sensory value of food; methods of food preservation, useful materials and techniques in food technology; by-products technologies; wastes products of industrial food production and methods of their utilization.
