Learning outcomes: At the end of the course the student is able to differentiate various cultivation systems (batch and continuous), categorize immobilization techniques, characterize major carriers used in immobilization procedures, know biotechnological application those systems and biocatalysts. The principles of biocatalytic processes and enzyme technology and its industrial applications are also widely discussed.

Competences: The student has insight in the behaviour of micro-organisms in food products, the factors influencing this behaviour and the way food preservation makes use of this knowledge. The student has also an insight in the basic analyses to determine the microbial quality of food products. The student is able to analyze a problems in the area of food microbiology and food preservation and to offer solutions for analyzed problems.

Prerequisites: General Microbiology, Biochemistry
